After making the Aussie meat pie I had a sheet of puff pastry left over in the freezer, and decided that I would make something sweet and easy.
I chose to make a free form tart, which is basically a nice way of saying ‘lazy pie’.
Here is the recipe, it is a great one if unexpected guests are coming and you want an impressive, quick and easy dessert! You can use whatever apples you have on hand, or even pears!

Free Form Apple Tart
1 sheet puff pastry, thawed
3-4 apples peeled, cored and sliced
1 1/2 teaspoon vanilla
3/4 cup sugar
1/3 cup flour
1/3 cup melted butter
3 eggs
1. Lay puff pastry in 9” pie plate or flan dish
2. Arrange apples on top of pastry, neatly or just throw them on
3. Mix remaining ingredients in small bowl and whisk
4. Pour mixture over apples
5. Fold in corners of pastry
6. Sprinkle top with a little cinnamon and sugar (I used 1 tsp sugar, ½ tsp cinnamon)
7. Bake in 375° oven for 35 minutes or until top is lightly browned
8. Serve with vanilla ice cream
