Here is the recipe (I use that term lightly as this is more relaxed than my usual!) I promised, sorry for the lack of photos along the way…
Chicken Parmigiana
- 4 chicken breasts (or more!) — I like to buy these when they go on sale and freeze them
- 1-2 eggs lightly beaten
- Approx. 1/2 cup flour
- Approx. 1 cup bread crumbs (I like to buy the seasoned ones, or season them myself with dried basil and oregano)
- Olive Oil
- Butter
- Pasta Sauce
- Shredded Mozzarella cheese
Cut any fat off the chicken breasts, try to tidy them up so they are all around the same size.
Dredge (that is the fancy cooking word for dip and coat) the chicken in egg, then flour, egg again, and finally bread crumbs. This gives your chicken a nice coating, make sure you get all the sides and the ends.
Heat approx 2-3 tablespoons olive oil, and 1 -2 tablespoons of butter in a large frypan or skillet. You want the oil to be hot, but not smoking. The reason you add the butter is so that the oil doesn’t burn, the magic combination of the butter and oil keeps the smoking point just right.
Place the chicken breasts into the oil (you may need to do this two at a time depending on the size of your pan/chicken). Allow to brown on each side (approx 2-3 minutes) until a nice crispy coating is formed.
Drain chicken on a plate covered in a piece of paper towel.
Place chicken in a shallow casserole dish (the rectangle glass Pyrex works well, or a lasagna dish), cover with a nice amount of basic tomato sauce (recipe here), or any jar of pasta sauce you have on hand, and sprinkle with shredded mozzarella cheese (as much as you like).
Bake in 350 degree oven for approx 20 minutes (again your cooking time depends on the size of your chicken) until no longer pink in the middle.
Serve with a side of pasta (which can also be dressed in the basic tomato sauce), salad, garlic bread or vegetables of your choice.
Hope this serves as inspiration for dinner this week– oh and it makes great leftovers too!
