A hint of summer – Lemon Sorbet

I love hot weather, and was thrilled when the temperature got up in to the 100′s last week!  It meant I had to try out my new toy.  An ice cream maker, generously donated by Deni, for me to review.  More ice cream recipes and a full review will be coming when the weather heats up!

My favorite summer ice cream is not really an ice cream at all, it is Lemon Sorbet. I love the tang and iciness!  So, without further explanation here is the recipe and photos:

Lemon Sorbet

  • 1 1/2 cups water
  • 1 cup sugar
  • Rind of one lemon (I peeled mine off in large strips)
  • 1 1/2 cups lemon juice — about 10 medium lemons — chilled.

1. Combine sugar and water in saucepan.  Bring to boil over medium heat and stir until sugar is disolved and the syrup is clear (about 1 minute)

2. Remove the syrup from heat and add the lemon rind.  Let sit for half an hour.

3. Remove rind and refrigerate syrup for 2 hours.

4. Add lemon juice to syrup and then churn in ice cream maker.  The Deni took about 15 minutes.

5. Freeze for an hour or so, and then serve!
