Mum’s Pasta Two Ways

My Mum is pretty amazing.  Not only as a Mum, but as a chef!  She was the manager of a catering business in Australia for many years, and has a knack for making great food!

She is also pretty amazing because she caters to my vegetarian needs, and my carnivorous husband too!

Here is how she made a delicious pasta for both of us a few nights ago.

Pasta with buttered broccoli & Pasta Carbonara

1. Cook and drain one pound of pasta (we used shells, but penne or spirals would work too).

2.  While the pasta is cooking, steam broccoli (either in the microwave or on the stove over boiling water) until tender but not over cooked.  You can cook as much or as little as you like.

3. Put 1 tbsp of olive oil, 2 tablespoons of butter, 2 cloves of garlic (crushed), 2 small red chilies (or 1 teaspoon of red chili flakes), and one tablespoon of lemon or lime zest into a frying pan over medium heat for two minutes.

4. Add broccoli to mixture and toss until well coated.  Set aside.

5. In a new frypan cook 5 slices of diced bacon, or some ham until crisp.  In a small bowl whisk two egg yolks with 1/4 cup cream, and 1/4 cup of  parmesan cheese.

6.  When pasta is finished cooking toss half through the egg mixture and add bacon.  Toss the other half with the broccoli mixture.

7. Serve with parmesan cheese and enjoy!!
